Kai Murukku (Hand Made Murukku) as the name suggests is a craft by the experienced hands in a traditional sense. The twirling and twisting gives its special spiral appearance which is almost a must on stage during South Indian weddings and festivals. While there are many variations available today, the hand made Kai Murukku holds significance among savouries.
Kannadiga's call it as Chakkli but it is not hand swirled like in Tamil Nadu.
Uniqueness of Tirunelveli Kai Murukku is, it is made from Par Boiled Rice (Puzhangal Arisi) compared to raw rice variant (Pacharisi) that makes it irresistible once you open the pack to stop with one & lot crunchier and has a distinct texture & taste.
As it is hand crafted and made at home, expect variations and oil at times as these are not machine made to suck out the oil. If murukku does not have oil, then it is not made with just rice flour but mixed with maida.
